Dairy Free Rice Pudding

Coconut Rice Pudding

Serving SIze: 6, Baking Time: 30 minutes

Free From: Gluten/Wheat, Dairy



½ cup Basmati rice, rinsed

2 cups light coconut milk

2 cups water

½ cup sugar*

1 teaspoon cinnamon  

1 teaspoon vanilla extract



Step 1 – Combine rice, coconut milk, water and sugar in a saucepan.


Step 2 – Bring to boil, then reduce heat and simmer 20 minutes. Stir occasionally.


Step 3 – Take off heat, mix in cinnamon and vanilla.

Enjoy warm or chilled.


*Tips and Tricks:

  1. Add less sugar to reduce the sweetness



  1. Cover the pan with a lid to help it boil faster, but watch out for it boiling over
